The harbour is beautiful day and night and is a must see when visiting Hong Kong. The views are incredible and at night all of the skyscrapers look amazing - one of the best skylines I have ever seen!
You can also get star ferries across the harbour which are really cheap and a great way to see Hong Kong.
Every night at 8pm there is the Symphony of Lights show (see my other reviews) which shouldn't be missed [looking from Kowloon towards Central] - really pretty, well choreographed and free!
I would 100% recommend.
